Fermenti Artisan Kim-Chi is handcrafted. With a focus on developing personal relationships with family farms, we use the finest organic Napa cabbage. Our Kim-Chi ferments for 10 days in German style stoneware crocks. We then cure it in refrigeration for several weeks to allow the complex flavors to develop further.

What makes our Kim-Chi a bit different than traditional Korean Kim-Chi is the omission of fish sauce. This is an all vegetable ferment with a somewhat intense flavor profile. We start with a foundation of ginger and garlic, on which a variety of different chili peppers dance around. It is spicy, yet still palatable, and works wonderfully when used with other rich flavors. We love it on tacos and paired with smoked meats.
